


In terms of flavour profile, the distillery said “our whisky will be unpeated with strong notes of barley sugar, honey and vanilla typical of maturation in quality first fill American bourbon casks. We will also age our whisky in sherry casks which will impart a rich, fruity depth with notes of raisins, figs, toffee, chocolate and Christmas cake. We’re lucky enough to get to define the ‘terroir’ for Cotswolds Single Malt and we feel it should reflect the greatness of this land – with primary notes of grain, fruit and oak.”

Founder Daniel Szor has enlisted Harry Cockburn, a Scottish master distiller and Jim Swan, a wood and ageing consultant to assist in developing the distillery and its products.
The Amercian born Szor, who has financed the distillery himself along with funding from the Cotswolds Distillery Founders Circle, said: “Behind our vision of establishing a distillery of worldwide renown, there is long-term investment and a considerable commitment of skills and resources.
“We intend all our products to be worthy ambassadors for the region and certainly aim to produce a flagship single malt that is characteristic of the region’s heritage, and every bit as good and intriguing as whisky neighbours to the north.”
